      Well, I am trying something new this week. A new outlook! I tend to focus on the negative a lot and get down easily when things are not going right or I am stressed. I am trying to be a bit more laid back this week and bring my stress level down which i think in turn will help my over eating ( I hope). I am going to the store today and plan on stocking up on fruits, veggies  and some more Smart Ones to keep me on track at lunch time. I have slacked off on exercise since I have been busy with back to school, home work and working. I am going to try to squeeze in the Wii fit today or a walk to get my metabolism going. I would like to lose 10 lbs by Thanksgiving, that seem like a very reasonable goal. I am going to visit some friends and relatives up North after Christmas and would like to have the weight off by then! Well enough for this week. Have a great week everyone and I hope to see some new blogs to read out there soon :)

      Sweet Fried Bananas with Cream Cheese Frosting

      (Recipe from Hungry Girl web site)

       

      Ingredients:

       

      1 large banana

      1/4 cup Fiber One cereal

      1/8 tsp. cinnamon

      pinch of salt

      2 tbsp. SPLENDA, Granular

      3 tbsp. Cool Whip Free

      1 tbsp. fat-free cream cheese; softened

       

      Directions:

       

      Cream Cheese Frosting:  Stir to combine cream cheese, Cool Whip and 1 tbsp.

      Splenda until smooth. Refrigerate.

       

      In a food processor or blender, combine Fiber One cereal, cinnamon, salt and

      1 tbsp. Splenda, and blend until a breadcrumb-like consistency is achieved.

      Cut banana in half widthwise and then lengthwise (so you have 4 pieces).

      Spray banana pieces (both sides) with nonstick cooking spray. Roll banana

      pieces in the breadcrumb mixture, making sure to cover them entirely. Place

      bananas in a pan sprayed with nonstick spray, and cook at medium heat for

      approximately two and a half minutes per side, or until crispy. Serve with

      chilled cream cheese frosting.

       

      Serves 1

      WW points: 3

       

      (Entire recipe: 200 calories, 1g fat, 160mg sodium, 52g carbs, 11g fiber, 19g sugars, 5g protein)

  • Deep-Dish Pizza Deep-Dish Pizza

      Deep-Dish Pizza 

       

      Cooking spray

       

      1 pound extra lean ground beef (4 % fat)

      Several cloves of chopped garlic

      Salt and Pepper to season

      1 1/2 cups Trader Joe's Pizza Sauce (or another brand would be OK, too!)

      1 ~ 10 ounce can refrigerated pizza crust dough (I made my own dough ...couldn't find the refrigerated pizza crust)

      2 cups fresh, sliced mushrooms

      1/2 diced green pepper

      1 cup part skim shredded Mozzarella cheese

       

      Cook hamburger and garlic in a medium nonstick Pam sprayed skillet over medium-high heat until browned.  Drain if necessary and set aside.  Pat out crust onto a Pam sprayed 9X13X2" baking dish. Press into bottom and halfway up sides of baking dish. Spread with Pizza sauce.  Top with browned meat, mushrooms, green pepper and cheese.   Bake, uncovered at 425 for 15-20  minutes. Cool 5 minutes before serving.

       

      Serves: 6 (very generous portions!)

      I think my friend is quitting Weight Watchers …she hasn’t mentioned it to me yet.  She made the statement to my darling daughter-in-law that she just ‘doesn’t have her head in it’ …I totally understand …and I know exactly what she’s saying.  I’ve been there.  I have gone to Weight Watcher’s when I really wasn’t ready and I didn’t think it was doing me any good … my head (and heart) just weren’t in it …but I went anyway … I know all too well what the consequences will be if I don’t go.

      The reality of not going for me is weight gain …lots and lots of weight gain.  I know, this summer has been a battle …the same 2 pounds up and down …but I haven’t gained 100 pounds back!  I’ve kept most of it off, and I have to be proud of that fact, and confident that it will finally ‘click’ and I’ll be on the road to losing again.  I’m in the right place, and ‘the right time’ is just around the corner!

      I realize that I’m not really ‘alone’ because I attend good sized class, with lots of enthusiastic participants.  The leader of the class is a real inspiration, too.  It’s just that I had someone going with me that I could talk to about our 'issues', and that I knew was going to be there, that would occasionally join me for a healthy breakfast after class.  Someone that was supportive outside of class as well (“Oh, Waaa” …I will stop my whining now!). 

      I’ve done it before on my own and I lived through it …I CAN DO THIS!  And we Weight Watcher’s know that almost everyone comes back …because it works!  And …I have no reason to whine …I have a great husband that is soooo supportive, a daughter-in-law that has lost over 30 pounds doing Weight Watchers (and looks amazing!), and close friends that I’ve known for years that attend classes in other areas that are hanging in there.

       …so, I’ll just keep going and wait her out  …she’ll be back!

      Hello everyone,

      I know...it has been along time.  I've been buried in school, work, and family stuff.  Some personal stuff that has completely overwhelmed my time this month.  August has been a very challenging month for me.  But, I am so happy and grateful to report that I am still on track with my new lifestyle of healthy eating ane exercising.  Inspite of everything I've had to face this month (mostly family issues), I have been able to maintain my weight and still get in my workouts.  Thank God for that!!  It is truly a miracle in itself.  I was working on my final paper for one of my classes and decided to take a break from everything and pop over to the Smart Ones Community.  I missed you guys so much!!  This is where I get my strength and motivation, so I just had to stop for a minute or two and see how everyone was doing.  I am catching up on everyone's blogs and feel good just seeing your names again.  :) 

      Power walking is still going on for me.  It really allows me to get out there and free my mind.  Yesterday, I did 4.044 miles in 50 minutes!!  I feel pretty good about that.  I am glad I've had to go through some of these challenges lately.  It has really been a test for me.  I didn't turn to food.  That is BIG deal for me.  It is easy to resist when things are going great, but when things are really bad and stressful and I can still stand up and say NO to food, then I know that my mind is in the right place now.  Instead, I walked more, I dug in deeper in my prayer life and I poured in time with my daughter.  I have new outlets now.  I am proud of that change in me.  I am a different person now. 

      One final note.....school is getting tougher as I get closer to the end.  I am finishing up this term with 2 A's again...miracle for sure.  I'll start my next term Sept. 14.  I am only taking 1 class and then another one in the Dec term.  Come Jan, I only have 5 more classes till graduation.....can you believe it?!  Whew....what a ride!!

      Well, I finally did it. Went to a WW meeting. I suppose I just needed to do what I am always telling others - take that first step. Once out the door and headed in the right direction, half the battle was won. The next stage was finding the school where the meetings were held and discovering that, yes, there actually was a meeting that night.
      I asked the person weighing people in to write down my weight without saying it out loud and she didn't question me at all. Next hurdle cleared! Then into the meeting. Of all the people who had weighed in, there were about 7 of us who stayed for the meeting. The topic was "Dining Out" but first we shared how we felt about our gains or losses, which meant I had nothing to say. The tips for dining out were pretty straightforward but it felt good to hear it all again and know that I was actually there participating. I was feeling pretty confident after the roll-taker had exclaimed that no way was I the age I quoted her. Always nice!
      At the end of the meeting a few newcomers and a couple of refreshers stayed to have the program explained to us. Only when I got home - armed with a tempting package of 1.5 point chocolate bars - did I notice that there was no diary page and no points list anywhere. There's no meeting next week because it's a long weekend. Pity. I'll have to wait until the week after to find out how I am doing and see if I have to purchase the additional pages. 
      I don't quite understand it yet. I don't know why ten years ago I had 25 points to play with and today I have 18. I obviously need a lot more time with this! Insight is very welcome.
      I feel happy that I am reassessing and readjusting my lifestyle sand am hoppefully on my way to breaking through my plateau .

      Grandma Clara's Rhubarb Dessert

       

      Crust:

       

      1 cup flour

      1/2 cup pecans, finely chopped

      1/2 cup butter

      1/4 tsp salt

       

      Blend above ingredients with pastry knife, of use food processor.  Press into a 9X13" pan.  Bake at 350* for 20 minutes

       

      Combine:

      1 1/2 cups water

      4 cups chopped rhubarb

      1 package sugar free Strawberry Jell-0

      1 package sugar free vanilla pudding (the kind you cook)

      Sweetener to taste (I used 3 packets of Truvia)

       

      In sauce pan, add chopped rhubarb and 1 1/2 cups water.  Bring ingredients to boil and cook until Rhubarb is 'saucy'.  Add the Jell-O and pudding and cook for about 3 more minutes.  Pour over crust and chill completely.

       

      When cool enough, mix:

      1 - 8 ounce carton of fat free Cool Whip

      1 cup miniature marshmallows

      1 tsp vanilla

       

      Spread over rhubarb layer.

       

      In a bowl:

      1 1/2 cups milk

      1 package fat free, sugar free pudding (vanilla, cheesecake or white chocolate)

       

      Spread mixture over cool whip.

       

      Top with 1/4 cup toasted coconut.

       

      Makes 12 servings

      WW points: 4

       

      NOTE:  You can add 1 cup of berries to the rhubarb if you wish.  It will not change the points value.

      I am happy to report I have lost the weight I had gained when I had company a few months ago. I over indulged in all kinds of foods and desserts and I knew I would pay dearly. Most of my clothes feel better now and I have been keeping up with my exercise plan. Since the kids are back in school full time I have 6 hours per day to work, clean or work out! Cleaning is quite the work out let me tell ya! Anyway I would like to be to my goal by Christmas since we are going back to Baltimore to visit family for the holiday! Well until next time...........

  • I Can Learn I Can Learn

      It has been a challenging two weeks.  I had an out-of-town wedding, a bridal shower for my daughter here at home, my daughter lost a job she's held for 7 years, her car died, a close friend couple lost one of their close friends, another friend suffered a miscarriage - and all this on top of planning a wedding that's now only 5 weeks away!  I missed last week's weigh-in and was really afraid of what the consequences would be this week.  But I was pleasantly surprised.  Okay, I was elated.  The scales showed a 2-pound loss!  In retrospect, I can see things I did "on program".  While out of town for the wedding, I did a lot of walking and was very conscious about what I ordered, when I had a choice, and what I took when I didn't have much choice.  I tasted the wedding cake, but only took a very small piece.  I enjoyed my daughter's shower cake, but again, it was a small piece and against all my wants and desires, it was not the piece with the most frosting!  Laugh if you will, but up until that very day, my hands would have literally shot out for the most frosting-loaded piece!  I did have one "see-food" day - any food item in sight ended up in my mouth - but I counted it and started over the next day.  I journaled all but the two days I was out of town and, apparently, I have ingrained the WW program far enough into my psyche that I still followed the plan, even in the midst of a lot of chaos!  Apparently I can learn!  Ten-percent look out - I'm on my way to you again and this time I'm determined not to be derailed!!!

      YAY! Since I last wrote I lost 3 lbs - I have 12 more lbs to go to meet my goal. My clothes are now snug on me instead of tight. ;)  It has been a busy week as I've been preparing for my oldest baby to go to Kindergarten. Well, I suppose he is not a baby any longer though. Yep, I have been all about the tears all week. Friday is his first official day, he is doing a staggered start where he will have his first day with only four kids. This way, the teacher gets to spend a lot of personal attention with them getting them familiar with the class, their schedule, etc. I am nervous but excited for him. The good news is that this gives me the opportunity to spend more one on one time with my two year old. Something I am very much looking forward to.

      It is back to the running program for me - I put it off this week as there was so much to do to get ready for school. Excuses no more - I set an official start day for Saturday. Will post more on the next update. I've also completely cut out sodas of my diet again.. I've been eating out more often lately and when I go out I had always given myself permission to have a soda since I am not 'allowed' to have them at home. I am back to drinking water and I think that has made all the difference in my initial weight loss. That, and some of it is bloating that is stabalizing after my surgery last week.

      Well, that is it for me for now.. I've loved reading all of your blogs, you guys keep me motivated. Loving the recipes too! Keep it up - let's stay inspired!

  • One last Hoorah Before School One last Hoorah Before School Starts!

      Well the summer is ending and I am feeling kinda sad about it :(  The kid's are going back Monday so we decided to take them To Blizzard Beach for one last summer fun day. We are only 2 hours from Walt Disney World so it is quite easy to do a day trip there. This will be lots of much needed exercise for me since I sit quite a bit working on my computer. The kid's are excited and I hope to have a great day!  We have had almost 40 days over 90 degrees here in Florida and I am really ready for some Fall type weather. Well hope everyone else is doing OK and hope to hear some more of your wonderful blogs!!Smile

      Despite all good intentions, setbacks are just part of our life's journey, particularly when the journey is about change. 

      This month I was doing really well with Wii Fit and increasing my time and levels when I took a few days out to go to an event. It was the International Balloon Fiesta - where a hundred hot air balloons would be. What I didn't know was that to get there you had to climb a gradual but steep incline and hike through woods and a large midway to get there. It was tough going! After watching a really cool exhibition of huge balloons glowing to music (see my photo) we elected to walk back in to town instead of waiting for the special shuttle bus. That night I knew something was wrong - my legs and knees were really hurting. I took a hot bath and went to bed hoping to wake up feeling better. I didn't! Then that day I did it all over again, limped through the pain up that hill, through those fields but at least capitulated and took the shuttle back to town and into my hotel room. That night I went out to dinner even though I was now limping badly and unable to put my weight on my leg. A week later I am still in pain although improving. So much for Wii Fit.

      Lesson learned! Sometimes we just have to listen to our bodies and not be a hero - or 'martyr' as my guy retorted - right!! It's great to keep pushing yourself but there are times when slowing down - and RESTING - will see you back another day to do more. Meanwhile I am resting and hoping and, yes, SMILING at my silliness.

      Chewy Molasses Ginger Cookies

      At only 50 calories a piece these soft cookies are sure to please!

      INGREDIENTS
      1/3 C butter or margarine, softened
      3/4 C packed Brown Sugar
      1/4 C dark Molasses
      1tsp Ginger, ground
      1tsp Cinnamon, ground
      1 egg
      1 1/2 C all purpose wheat flour
      1/2 C whole wheat flour
      1/2 tsp cinnamon
      1/4 C granulated sugar

      DIRECTIONS
      Beat the Butter on medium-high speed in a large mixing bowl for 2 minutes. Beat in the brown sugar. Add the Molasses, Ginger, and Cinnamon, mix thoroughly. Add the Egg. Mix in as much of the flour & wheat flour as you can with the electric mixer. Stir in any remaining by hand. Refrigerate for 1 hour.
      Heat oven to 350 degrees Fahrenheit. Spray 3-4 cookie sheets with non-stick cooking spray.
      Shape into 1 inch balls, roll in granulated sugar mixed with cinnamon. Place 2 inches apart on prepared baking sheets. Bake for 8-12 minutes, until cookies are set and tops crack.
      Makes 48 Cookies

  • It Was an 'OK' Week It Was an 'OK' Week

      Yes, just OK.  I lost a little …but I know that a ‘little’ is better than nothing  …or … (woe is me!) … a gain!  It’s those dang summer week-ends …they’re killing me!  Well …not really.  It’s not THAT bad, and I know that it's because of the choices that I continue to make.  (What will I blame when winter comes?  The chili?  The beef stew?  The home-baked bread?  The hot cocoa?  The cold?  …I must admit, if I want to I can find any excuse to eat too much).  I just like complaining ‘cause you’re reading this, and it’s nice to be able to kvetch a bit because you’re a great audience, and you always give me such brilliant feed-back  …thanks for that! 

      We had a wonderful Weight Watcher’s meeting today.  Our ‘leader’ is outstanding.  She’s lost 139 pounds and is so down to earth.  She’s maintained her weight loss for over 7 years.  She loves to eat, and always has ideas about what we can eat that will ‘satisfy’ us.  She knows that we all ‘blow it’ once in awhile (her included), and that’s alright.  Just get back with it.  She knows how to motivate, and helps us to set goals.  She’s not afraid to tackle the food  …a great BIG issue for all of us, and she hits it straight on.

      We have a family reunion this week-end (…yes …another week-end full of food and fun!).  I’m looking forward to seeing everyone.  I have a terrific family.  I am hoping to stay ‘somewhat on track’ …if I can …one of my sisters makes the best potato salad ever …my niece bakes fabulous pies!  She brings 4 or 5 every year …different flavors, and each and every one of them is amazing!  My nephew makes cheesecake to die for, and another nephew REALLY knows how to BBQ a rib (or forty) …I’m feeling kind of queasy already …”Oh Fiddle dee dee … I'm going to live through this and when it's all over, I'll never be hungry again.” (Scarlet …Gone With the Wind).

      What can I say …I’ll do my best, ‘cause that’s the best I can do.

  • Shrimp & Mushroom Pasta with ' Shrimp & Mushroom Pasta with 'Alfredo' Sauce

      Shrimp & Mushroom Pasta with 'Alfredo' Sauce

       

      2 cups sliced mushrooms

      2 cups deveined shrimp (tails off) 

      1 medium onion, diced

      2 cloves minced garlic

      Salt and pepper to taste

      2 cups cooked high fiber pasta

       

      Sauté mushrooms, onions and garlic in Pam sprayed pan.  Add shrimp and cook until pink (done).  Toss with hot cooked pasta and 'Alfredo' sauce.  Serve at once.

       

      'Alfredo' Sauce

       

      4 wedges Laughing Cow cheese

      1/3 cup low fat milk

      1 clove minced garlic

      1/4-1/2 tsp. Italian seasoning

      1/4 cup parmesan cheese

      2 Tbsp. Smart Squeeze (in the butter section at Winco)

       

      Put all of the ingredients except parmesan cheese in a microwave safe bowl.  Cook until cheese is melted.  Stir often.  Add parmesan and stir until smooth.  Stir into pasta.

       

      Makes 2 servings

      Remind me again to not let five months go by without jogging. I stopped jogging in March because of shin splints, and just went yesterday again for the first time since. While I was surprised by how far I went (30 minutes without stopping - at snail pace, I might add), I can't believe how sore my entire body is today!

      Despite the overall achiness, I feel great! Of course, when I first stopped my run, I felt really awful. It was about 90° and sunny during the entire run and I kept thinking to myself "you are a bonafide doofus for running right now!". I drank a ton of water yesterday immediately following, and I don't think I would have stayed out longer than the 40ish minutes I was out there.

      So I'm still on track for my weekly goals of 3500 calories/week in exercise. Last week I was 350 calories shy of my goal, but still managed to get in 5 great workouts. This week I'm definitely on track to meet and possibly exceed my goal.

      Lost 1 pound last week, which was also my target. I wish I could drop more, but it's just not how my body operates.

      Hi Jaycee.  I remembered seeing this recipe of the Rachael Ray Show, and thought of you when I saw your beautiful tomatoes.  I figured that if you use high-fiber pasta, the points would be about 5 per serving.  I haven’t tried it yet, but as soon as I have tomatoes as lovely as yours, I will!  …it sounds delicious!

       

       

      Pasta with Roasted Tomatoes

      Serves 4

      ·         1 pound pasta elbow, Fuzilli or rotini

      ·         Salt

      ·         2 pints grape tomatoes

      ·         2 cloves garlic, grated

      ·         A few drizzles of extra-virgin olive oil (EVOO)

      ·         Freshly ground black pepper

      ·         20 leaves fresh basil, roughly chopped or torn

      ·         1 cup grated Parmigiano Reggiano

      Preheat oven 425°F.

       

      Place a large pot filled with water over high heat and bring up to a boil to cook the pasta. Once boiling, add some salt and the pasta, and cook until al dente according to package directions. Reserve about a 1/2 cup of the cooking liquid before draining the pasta.

       

      While the water is coming up to a boil to cook the pasta, place the tomatoes on a cookie and grate the garlic over them.

       

      Drizzle with some EVOO and season with some salt and pepper. Transfer cookie sheet to the oven and roast tomatoes for 8-10 minutes or until the tomatoes start to burst. Remove from the oven, discard the garlic cloves and transfer roasted tomatoes to a large serving bowl. Add the reserved pasta water and, with a potato masher or a fork, lightly smash the tomatoes.

       

      Add basil, drained pasta and Parmigiano cheese and toss to coat.  Toss to combine, taste and re-season with some salt and pepper then serve.

      Right, so here’s my first attempt at “blogging” LOL ! Just thought I’d share my first real “ gardening success” with you – you can see a (ever so slightly blurred, sorry I’m not a master photographer LOL) picture of my very first “tomato harvest” above. With cravings of “I must have a snack NOW!” creeping up on me, I snuck out into the falling dusk yesterday evening into my greenhouse and tracked down those lovely fruits of the vine in all shapes and colours. Washed, sliced into halves and garnished with nothing more than a sprinkling of dried garlic, sea salt, black pepper and basil, they made a most satisfactory and filling snack indeed, and I’m proud to say I went to bed later that night without having even thought of anything chocolaty or sugary (honest!) During another foray back into the wild jungle of twisting tomato plants which is my greenhouse earlier today, another thorough search yielded even more of these lovely orange-red-yellow delicacies, and I can’t wait to turn them into tonight’s evening treat Laughing Here’s hoping my kohlrabi and broccoli “experiments” turn out just as well !

      Wow, I had not realized it had been so long since my last Blog Post. Well here goes. I have been quite busy working and getting ready for back to school which is in exactly 10 days ( I am not counting huh)  I am planning to kick it into gear with the exercise once I have some time to myself. I need to lose that last bit of weight and I still have not gotten rid of the weight I gained when I had a house full of visitors. My clothes are feeling tight around the middle and I cannot stand it any longer. Good bye to the late night snacks I crave. I think the late night eating really puts the most weight on me so I need to get that under control.  I also have gotten back into my neighborhood walking/running group which I had neglected for the summer. I think I will enjoy it more in the fall when the temps drop a bit. Well I guess that is all that is new for now for me. I hope to read some new blogs from everyone else soon Laughing
